Bacon-Cheddar Bread Recipe

One of the greatest, and worst things in the world is bacon.  Its just so delicious and unhealthy.   Who (that can eat bacon) doesn't love it?  Even vegetarians love the stuff.  Some just don't want to admit it :-)

For X-mas I usually pick a gift, and give it to everyone.  The 3 Xmas's ago I gave people the Star Wars Pop-Up Guid to the Galaxy.  Last X-mas I gave out Dr. Horrible DVD's.    This year I didn't want to buy things to give.  I felt like being creative, and at a party with people where I had to make cookies, I decided to make Bacon Bread.  I'd never made bread before in my life, but I knew this had to be done.  I purchased a Breadman, breadmaker from Amazon, and scoured the internet for good recipe's.

I eventually came across this recipe on about.com, but after making it I was very disappointed.  It basically tasted like white bread.  The bacon was their, but you couldn't taste it.  I experimented for days on different loaves of bread, and came out with something all of my friends (with the exception of one weirdo) love.

This is for a 2LB loaf.  This all assumes that you have a bread machine with a fruit adding cycle, and you know how to use it.


Perparation - Before you really get started you need to cook 8 strips of bacon (If your vegetarian and you just want to use bacon bits you can skip this step).  DO NOT THROW OUT THE BACON GREASE!

Ingredients in this order

  • 1-1/3 cups water
  • 2 tablespoons vegetable oil
  • The bacon grease from cooking the bacon.
  • 1-1/4 teaspoon salt
  • 2 Tablespoons of Bacon Salt (this really added to the bacon flavor)
  • 2 tablespoons plus 1-1/2 teaspoons sugar
  • 3 1/2 cups bread flour
  • 1/2 cup of mashed potato mix
  • 3 tablespoons nonfat dry milk
  • 2 teaspoons dry active yeast


  • While its stirring in your bread machine, before the fruit cycle, occasionally some dough will move to high on the walls of the container away from the rest of the dough.  Just take a knife and swipe it down.  Its not really necessary but it might come out better this way.

    Added during the fruit cycle of your bacon machine -

  • 2 cups shredded cheddar or swiss cheese
  • 8 slices bacon, crumbled (If your a vegetarian use a total of 6 Tablespoons of bacon bits instead)
  • 3 tablespoons bacon bits 


  • Cook Time - 3 hours 18 minutes in a Breadman on normal settings (I haven't tried this on a rapid cycle yet, but it might work)

    When your adding the additional ingredients during the fruit cycle it will appear like your adding a LOT of stuff.  Don't worry about it, It will all mix in properly.


    When its all said and done, the inside of the bread will seem softer then normal bread due to the cheese and grease.  I think this adds to the flavor.  Also the real bacon tends to trap itself on the outer shell of the bread, while the bacon bits stay in the center.  The bread will be more of a yellowish/brownish color on the inside then a white color.  If the bread falls, don't sweat it.  It will still taste awesome.

    Jeff, in my current drunken state I say now that I will send you a loaf. Just email me your address to rchapoteau at gmail dot com and I'll send it to u this week. (and this is only for jeff since he mentioned it and only lives a few states away so he should get it in a day).

    Murmur needs a better way to message other creators if anyone is payint attention :-)
